Healthy Strawberry Ice Cream
1 cup raw Cashews
1 cup pitted dates (Costco now carries these by their dried fruit & granola bars)
2 cups water + more water if needed
1/2 cup white or pinto beans
1 tsp vanilla
12+ Large Frozen Strawberries

Instructions:
Soak nuts and dates in 2 cups of water for 4 hours or more to ease blending. Blend nuts, dates, beans, water & vanilla in high powered blender until smooth. Add more water if needed to thin and dilute to desired richness. Add frozen strawberries and more water if needed, blend until smooth. Freeze in an ice cream freezer.

  12. I don’t like to be negative, but I do need to be honest. This giveaway is too complicated, at least for me. I’ve only made it through four authors in about an hour, so I can’t imagine sticking around to finish the rest. The most frustrating part is that two of the author’s pages didn’t have any place to leave comments as far as I could tell. I’m giving you this feedback so you can either tweak the format or keep it in mind for future sweepstakes. Thanks anyway for the chance to participate. Whoever wins is going to really deserve it! 🙂

    I haven’t left an ‘official’ comment on your blog ‘for’ the giveaway, so here it is!!
    I think I will ‘try’ to do this giveaway! First one I’ve participated in AGES! When there are over 100, I never make it through them all. Thanks for this giveaway for this book! It looks SO springy!! Beautiful and fresh! Ah, Spring! This photo makes you WANT to walk barefoot through the grass!
    I want some warm air SOOOOO BAD!!! Although, in another thought, this cold winter here in Michigan sure helped reduce my hot flashes to almost zilch! LOL!!! We’ll see what the Spring and Summer bring! Supposedly it is NOT supposed to be so hot and get up into the 90’s much because the lakes froze over ‘over 94% now’! Normally they only freeze over by 9%! We got the Polar Vortex here this winter! This was the FIRST TIME I EVER heard that word! I didn’t know it existed!! Kind of scary, in a way, how our weather has changed SO much!
    I think if I win that book, I will frame the cover! LOL!!!! Seriously, if we have another bad winter like this one, ‘this book’ looks SO springy! I can play games with myself and trick my head into thinking it’s spring outside, until someone opens the door, or I have to let the dog out! LOL!!!
